The Story Behind the Brittle
The Ngali nut (Canarium indicum) is a treasured indigenous nut of Melanesia, also known as Galip nut in Papua New Guinea and Nangai nut in Vanuatu. With its rich, creamy flavour, it’s long been a staple in the Solomon Islands — but rarely makes its way beyond the rainforest.

We source our Ngali nuts directly from Shane of SolAgro, the only exporter bringing this remarkable nut to the wider world. When Chef Jess visited Shane in May, she had the chance to see the Ngali nut tree in its natural setting and even hug one planted by Shane’s mother decades ago. It was a powerful reminder of the cultural roots and family traditions behind this ingredient.
