Caramel Chocolate MUD CAKE
Ingredients:
400 g caster sugar- CARAMELISE
250 g unsalted butter
200 ml water, hot
220g white chocolate
220 g plain flour
150 g self raising flour
1/2tbsp Cinnamon, ground
1/2 tsp bi carb soda
1/4tsp sea salt
1/4 cup grape seed oil or neutral oil
4 eggs lightly beaten
1/2 cup buttermilk.
1/2tbsp vanilla extract
Method:
- Put sugar and enough water to “wet” the sugar and cook till desired caramel. Take off heat and very CAREFULLY add hot water, then butter. Stir till dissolved add heat if necessary.
- Place chocolate in a bowl and pour over hot liquid, stir till even.
- Sift into a bowl, flours, cinnamon, bi-carb, add salt mix in chocolate mixture using whisk till even.
- In a separate bowl mix eggs, oil, buttermilk, vanilla. Then add the mixes together, beat till even, pour into desired tin and bake at 140c. For necessary time to match tin. This will fit a 9inch round to 8inch square comfortably, can take 1-2 hours.
